Description of the subject

Food safety is a major concern for the food industry, governments and consumers. The risks of contamination or food fraud can have disastrous consequences for the health of consumers, jeopardizing the reputation and sustainability of companies in the agri-food sector.
 

A tragic example of the terrible impact of food fraud is the incorporation of melanin into milk powder in China in 2008. This fraud exposed infants to a toxic substance, leading to death and serious illness. This alarming situation is the result of a blatant lack of effective food regulations and controls, combined with considerable economic pressure on companies to offer low-cost products.

 

In this context, Nuclear Magnetic Resonance (NMR) plays an essential role in ensuring food safety. Used in various sectors, NMR helps determine the composition of samples, including foods, by identifying and quantifying different components such as proteins, lipids, carbohydrates and other essential constituents. This makes it possible to check whether the products comply with current standards and regulations. Additionally, NMR plays a vital role in the detection of contaminants and unwanted substances such as pesticides, veterinary drug residues and undeclared food additives.

 

Required profile

Eligible candidates must have a master's degree or equivalent (bac + 5) in the field of organic chemistry, molecular chemistry or medicinal chemistry with solid knowledge in analytical chemistry and biology
